Keto celebratory cake!
Ingredients:
• biscuit:
• 3 eggs,
• 30 g butter,
• erythritol to the desired sweetness,
• a tablespoon of coconut flour.
• Chocolate cream:
• 80 g butter,
• 2 dcl coconut cream,
• 80 g dark chocolate.
• Raspberry topping:
• 100 g raspberries,
• sweetener of your choice,
• 10 g butter.
• Crispy hazelnuts to sprinkle:
• two tablespoons of ertiritol,
• 50 g of ground hazelnuts,
• a little pepper.
Preparation: whisk egg yolks with sugar, a teaspoon of baking powder and coconut flour. add the beaten egg whites and mix lightly. bake for half an hour at 180 degrees Celsius. Meanwhile, melt the chocolate and butter and gradually add the coconut cream. In a separate bowl, heat the raspberries with the sugar, and when they are cooked to the desired density, add a cube of butter. Pour the chocolate cream over the biscuit, cool a bit and add the raspberry topping. sprinkle with crispy almonds before serving (add ground almonds to melted erythritol, mix evenly and allow to cool).
The cake is light and delicious, both adults and children enjoy it. We made it to celebrate an important event for us and it lived up to expectations. We definitely recommend you try it, because this cake is a delicious and refreshing keto dessert.💙
