Keto lemon bread
~ My lemon story ~
Lemon has been high on my list of foods I don’t like at all all my childhood. In the circle of people who knew me, I was also known for that attitude. Lemon did not suit me in any form, and the very thought of lemon made my mouth shrink, and I would often shudder at the mention of lemon. Therefore, it is even more interesting that today I often make and enjoy this cake even more. I don’t know how this big turnaround in my thinking came about, but I’m certainly happy that it did. (My lemon experience has changed so much that for years now I have been drinking lemon water every morning as soon as I wake up. It works very well on digestion and also helps in waking up. Not to mention all the other benefits of lemon on our body.) It is encouraging that lemon and one of the not so numerous, keto friendly fruits, so it is impossible in our home that sometimes there is no lemon. After this introduction, it will be best to end the story with the recipe itself, which I hope you will try yourself.
Ingredients:
• 2 lemons,
• 4 eggs,
• 50 g of coconut flour,
• 50 g of almond flour,
• 80 g of butter,
• 1 teaspoon of baking powder,
• a sweetener of your choice (type and quantity),
• 2 tablespoons of coconut cream.
Preparation: Beat eggs, lemon juice, grated lemon zest, sweetener and melted butter until the mixture becomes frothy. Then add a little of the mixture of both types of flour and baking powder. I added two more tablespoons of coconut cream to the mixture, to make the mixture creamier and fuller tasting (you can do without it). Pour the mixture into an oblong mold and bake for about 50 minutes at 180 degrees Celsius (approx. 356 Fahrenheit). I poured a mixture of ground erythritol and coconut milk over the cooled cake - I added a tablespoon of coconut milk to 3 tablespoons of erythritol.
• The cake is very juicy, in my home it is made at least once a month. I often play with flour combinations, sometimes I use ground hazelnuts, Brazil nuts or a combination. It tastes different, of course, but we like every combination.💙
