Keto Russian hats
Ingredients:
100 g of coconut,
50 grams of dark chocolate,
3 eggs,
150 ml of coconut cream,
sweetener of your choice,
100 g of almond flour,
80 g of butter,
a teaspoon of baking powder,
20 g of bitter cocoa.
Preparation:
biscuit: whisk whole eggs with sugar, add melted butter, ground almonds and baking powder. Pour into a baking tin and bake for about 40 minutes at 180 degrees Celsius.
White cream: chop the coconut in a blender a little and add it to the coconut cream and cook on a low heat for about 5 minutes. Add the sweetener to the desired sweetness and butter and leave to cool. If the cream is overripe, a little xanthan powder can be added.
Glaze: Melt the steamed chocolate and add a little butter to shine.
When everything is done, cut the biscuit into a cup (choose the size yourself) and then cut each circle horizontally to get two circular pieces. Coat the surface of one circle with cream and cover with another piece of biscuit. Also coat the edges of the fillet "caps" with the filling, then roll them in coconut. Then lightly apply melted chocolate on top. Repeat the process as many biscuits as you have.
I prefer when the "hats" are small, easier to eat and look more elegant. This keto version is delicious and all the housemates agreed that we have to make them often. Try it for yourself and see for yourself 💙
